Okay, let me start this out by saying my overall experience was not good.
On maps, when you type in 3uilt Tacoma, it takes you to Jefferson street. This was bought out by a different bar and they are no longer located there. Instead they're located on Tacoma Ave S.
So it's fine, it's an additional 8 minutes to get there, so I drive there, pay for parking and go inside. I'm expecting it to be pretty quick, maybe 15 minutes to get food and then another 15-20 to eat.
They tell me to choose any spot I want and I do, unfortunately, I do not see a single server for over 5 minutes, so naturally I assume I have to go to the front to order. However, I find out, it's not a requirement to do that. I order the Chicken bacon ranch sandwich & a cider.
I wait around 25 minutes and still don't see the food. I finally go to the front just ask for the food to go and a refund on the cider.
The staff was a little shocked the cider hadn't come already - but I'm not sure how they do shifts in the back.
The staff is incredibly friendly and have no problem with them at all. It just seemed like the place was pretty empty so I'm not sure why there was a delay (there could have been a lot of mobile orders).
Also, the menu photos that show up on YELP are not up-to-date. I went because I wanted the Caprese flatbread and oysters. I came here with my boyfriend on a Saturday for a late lunch and was incredibly underwhelmed. He grabbed a drink from 7 Seas and we ordered online from 3uilt. I expected the menu to have more options, but it was limited to a few appetizers, salads, and sandwiches, and quite a few of the menu items were out of stock. It was super busy, so it took about 25 minutes for our sandwiches to be ready.
I ordered the Elemental with peppers, which was roast beef, white cheddar, and provolone on sourdough. It was served with a jus for dipping and a side of chips. My boyfriend ordered the Fibonacci, which was ham, white cheddar, and Swiss cheese on sourdough. It also came with a side of chips. The sandwiches were decent, but $14 each. The sandwiches and pretzels pair perfectly with the beer from 7 Seas. The menu is limited, but everything is delicious. 3uilt is definitely more than your typical sandwich shop, but is on the expensive side for the area. I would not go here without it being in 7 Seas, but order every time I am there for a beer!

A stop that represents Tacoma... under appreciated but true charm. Calling it just a sandwich shop would be insulting. Charcuterie boards, artisan cheese, fresh oysters and yes sandwiches. All of it delicious, fresh with an emphasis on local food and vendors. So what could be better.... House it in local brewery 7 Seas so you can have a pint of your favorite beer, sour ale or wine from Mosquito Fleet Winery (Bel fair).

We went to 7seas for a Friday evening office event. After a while we decided to order some food from 3uilt. I ordered the garden grove salad with avocado. It was delicious! The salad was dressed already but not overdressed at all and the hint of pesto was so delicious. There was a good amount of chickens on the salad but a lot more candied walnuts that I needed. Overall really delicious. Everyone else's food looked great too and everyone was happy and satisfied. Next time I want to order one of their sandwiches since they looked so good

I feel like my 5 star review previously needs to be revisited. I do NOT think this is a 2 star establishment. I am AVERAGING my original 5 star with 2 stars to get 3.5 stars. Yes, the sandwiches are good, yes the pretzels and cheese are very good as well--but at some point you have to ask yourself "are the costs justified?"
According to my review, I have 20 check ins. We were happy to support these guys during COOF-19 to try and keep a local business afloat during the Plandemic's War On Small Businesses. Perhaps these prices were partially how they were able to stay afloat when they weren't feeding patrons of 7 Seas. But now that sit down business is back, now that 7 Seas patrons will go to 3uilt to soak up the beer in their stomachs, they have a plethora of customers and I don't understand these prices, especially in Tacoma. $3 for a cup of beer cheese? $9 for a pretzel? No thanks. After paying almost $60 (with a normal tip) for a sandwich (hopefully two sandwiches), a salad and a pretzel last time, we've had our last meal here. Interesting to look at my own pictures from 2017 (see my previous review). The pickled vegetables, sliced meat and spicy peanuts do NOT come with the pretzels anymore. So the prices have not only gone up, but you also get LESS for your money. Unbelievable.
$50-60 Is what we typically pay for a meal literally anywhere other than fine dining INCLUDING alcoholic beverages. But spending $60 for food and an additional $20 for beer in a fucking warehouse in the heart of Tacompton is absurd. As others have noted, this sandwich shop is inside the beautiful 7 Seas building on Jefferson. 7 Seas doesn't serve food (and never intended to) so this is the epitome of a symbiotic relationship.
Bottom line: the food here is as good as it gets. The sandwiches are delicious. High quality bread, high quality ingredients, executed brilliantly. Don't let the long list of ingredients on each sandwich scare you away--IT WORKS.
This place is worth eating at EVEN if you're not drinking at 7 Seas. Can not recommend highly enough. - 156412140725 août 2018
3uilt is genius-ly placed inside 7 Seas brewery and the combination is amazing. We've been a couple of times, and our go to brew food is the charcuterie!! This time we got 2, and some hot buttery pretzels w/cheesy goodness. The charcuterie has a great variety of meats & cheeses, including cheese curds, along with grapes, pickles, cracker/bread options and this time it included a sweet apple compote (last time it was blackberry, I think, don't quote me). The pretzels were lightly salted but super buttery. The cheesy sauce was a fantastic dip option.

Phenomenal food, service, and efficiency.

Sorry, but no...no...no. Customer Beware.
Perhaps they're working on things but I used Yelp to steer me to oysters.
1). Yelp says there are oyster. No, they've move to a new location and awaking a license. Beware.
2). They posted a sign saying they're holding a "Happy Hour" special but didn't offer to me. Beware.
3). On a Saturday afternoon, no customers. No sports or other entertainment.
4). They've moved from a previous location so don't be fooled by Yelp.
5). Cashed out, didn't offer the "happy hour" discount as displayed in front of the business. Why? They were celebrating their 1 year. WTf???
Overall, it was disappointing. I can accept thing being different. But they were off today.
Change melt mind!
